Hails from: Dinner Then Dessert

Makes: 12 muffins

Ingredients:
- 1/2 cup (100g) sugar
- 1/2 cup (110g) packed brown sugar
- 2 eggs
- 1/2 cup (120g) vegetable oil
- 1 teaspoon (5g) vanilla extract
- 1 1/2 cups (190g) flour
- 1/2 teaspoon (3g) baking soda
- 1/2 teaspoon (3g) salt
- 1/2 teaspoon (1.5g) cinnamon
- 1 1/2 cups (225g) chopped peaches
Instructions:
1. Place rack in the center of the oven and heat to 350. Line muffin tin with liners.
2. In a stand mixer fitted with the paddle attachment, or a large bowl, add 1/2 cup (100g) sugar, 1/2 cup (110g) brown sugar, 2 eggs, 1/2 cup (120g) vegetable oil, and 1 teaspoon (5g) vanilla. Mix on the lowest speed until smooth (about 30 seconds)
3. Sift together 1 1/2 cups (190g) flour, 1/2 teaspoon (3g) baking soda, 1/2 teaspoon (3g) salt, and 1/2 teaspoon (1.5g) cinnamon.
4. Add the dry ingredients to the wet and mix on the lowest speed until just combined.
5. Chop the peaches. It is up to personal preference if you’d like to peel the peaches before chopping. I think keeping the skin on adds a nice texture.
6. Add the 1 1/2 cups (225g) of peaches to the batter and scoop into muffin tin.
7. Bake for 22 minutes.
